Burger Bun (Victoria Sandwich):
Mix 175g butter and 175g caster sugar together until creamy. Beat 3 eggs and add gradually, then fold 175g self-raising flour into the mixture. Add a little milk if needed to make it a little runnier. Spoon equally into 2 sandwich tins and bake at 180C or gas 4 for approx 20 mins.
Heat 250g dark chocolate and 250g butter in a dish over a pan of boiling water, until melted and mixed. In a different dish, whisk 4 eggs and 200g caster sugar together until thick. Fold in the choc/butter mixture and then fold in 75g self-raising flour and 1tsp baking powder. Pour equally into 2 sandwich tins and bake at 180C or gas 4 for for approx 25 mins. Leave to cool and then choose the best burger for use in the Burger Cake!
