Fruitburst Muffins

Mix 2tsp baking powder with 225g plain flour in a bowl. Melt 50g butter in a saucepan. In a different bowl (or jug), beat 2 eggs and add 175ml skimmed milk and 100ml honey. Add the melted butter to this mixture and stir. Add to the flour and stir in 1tsp cinnamon and your preferred dried fruits (I used 140g raisins, 80g apricots and 70g cherries). Mix quickly without overworking - lumps are fine!

Lightly butter a 12 hole muffin tin and spoon the mixture into this. Bake in the oven at gas 6 or 200C for 20-25 ins. Leave to cool in the tin. Enjoy as they are or decorate to make them extra special! (see Monopoly muffins)
