So you may have noticed that it's nearly blimin' Christmas! With that in mind, I made some mince pies. When I've perfected that recipe, I will be more than happy to share it with you, but it needs a bit of fine tuning. However, as I am Little Miss Cake Maker and I do love cake, I felt the need to make Mince Pie Cupcakes a thing. And they totally are. They're amazing!
So the method I went for after having this idea in my head for a good few months, was a pretty simple one. I made my standard cupcake mixture with a pinch of 'AllSpice' (really not a good thing to confuse with Mixed Spice which is totally savoury! Not that I almost did that...) and spoon half the mixture into pretty cake cases. Then plop a teaspoon of mincemeat (again, don't confuse with minced meat ;)) and spoon the remaining mixture over the top, covering the raisiny gloopyness. Bake as usual!
Then I simply made some royal icing (glace icing would work alright and that's super simple, just icing sugar and water mixed together) for the snow topping, and I found the cutest little candy cane sprinkles that I couldn't not buy - this was a good enough excuse to use them as simple decorations.
And to finish, I had a lovely festive cake stand given to me by my lovely Swindonian friend who runs this blog :)
So there we are - Mince Pie Cupcakes. It's the future; I've tasted it! (I do like garlic bread too, for any Peter Kay fans that actually understand my jokes.)
